      • 1/4 cup pure maple syrup
      • 1 tbsp fresh orange zest
      • 2 tbsp fresh orange juice
      • 2 sprigs fresh rosemary, minced into tiny clusters
      • 1/4 cup raw pecans, roughly chopped
      • 1 pinch sea salt
      • Cooking spray for greasing the pan

Necessary Utensils & Equipment

        • 24-cup mini muffin tin
        • Small heavy-bottomed saucepan
        • Pizza cutter or chef’s knife
        • Rolling pin
        • Cutting board
        • Measuring spoons and dry measuring cups

Instructions

        • Preheat your oven to 375°F (190°C) and lightly grease a 24-cup mini muffin pan with nonstick spray.
        • Add fresh cranberries, maple syrup, orange zest, orange juice, and a pinch of salt to a small saucepan over medium heat.
        • Simmer for 8 to 10 minutes until cranberries pop and thicken into a jammy compote; set aside to cool slightly.
        • Unroll the cold puff pastry onto a lightly floured surface, rolling gently to smooth any folds into a 10×15-inch rectangle.
        • Cut the pastry into 24 equal squares using a pizza wheel cutter.
        • Press each dough square gently into the cavities of the mini muffin tin, letting the four corners poke upward.
        • Dice the chilled brie into 24 bite-sized cubes, leaving the edible rind attached.
        • Place one cube of cheese into the center of each dough pocket.
        • Spoon one teaspoon of warm cranberry compote directly over the cheese.
        • Scatter chopped pecans over each cup for crunch.
        • Bake for 18 to 20 minutes until the pastry corners turn deep golden brown and the cheese bubbles softly.
        • Remove from the oven, garnish immediately with fresh rosemary needles, and cool in the tin for 5 minutes before serving warm.

Why Fresh Cranberries Beat Canned Sauce

I made these for family for the first time and used canned jellied sauce. The gelatine melted in the heat from the oven, running down the tin and causing black sticky rings around each individual pastry ring.

Having raw fruit on the stove to cook for less than ten minutes, keeps moisture to a minimum. The natural pectin in fresh cranberries firm up as they cool, thus preventing them from running through the pastry base.

The zesty citrus peelings provide a crisp contrast to the creamy dairy ingredients. The tart bite will leave your guests wanting more, rather than being overwhelmed before the meal.

Keep your cheese firm in the freezer for ten minutes before cutting; warm room-temperature cheese sticks to your blade and turns into paste when you try to dice it.

Mastering the Puff Pastry Base

The flakiness of your pastry is regulated by the temperature. If your butter has blended into the flour before going into the oven, then you’re missing out on those airy pockets altogether.

If at all possible, work on a cold counter surface. Be sure not to too thin a sheet when pushing your squares into the pan wells as the melted cheese will seep through the bottom of the pastry.

Allow thaw puff pastry to stand in the fridge overnight, rather than on the hot kitchen counter.
For the best results, don’t use a dull knife to cut; instead, use a sharp pizza wheel to avoid the edges getting cut together.
Keep the blossom on your cheese as it will retain shape in the heat and provide deliciously earthy flavours.

Be sure to listen closely while they’re baking. At about minute 15, you would like to hear a gentle “sizzle” as the butter expands and pushes each flaky piece up.

Smart Make-Ahead and Baking Tricks

When hosting someone during the holidays, it is important to plan with care in order to be able to sit down with family. Fortunately, the raw pastry bites can be made in the tin several hours in advance of party time.

Press the dough squares flat, drop in the cheese pieces, top with cooled fruit and place the whole muffin tin into the refrigerator, covered with plastic wrap. Take off the plastic when the doorbell goes off and bake them right out of the fridge.Cranberry & Brie Bites

Reheating Leftover Pastry Cups

Never microwave puff pastry unless you enjoy chewing damp cardboard. Reheat leftovers on a parchment-lined baking sheet at 350°F for six minutes to revive crisp edges.

Flavour Swaps and Nut-Free Options

If you face tree nut allergies at your gathering, swap the chopped pecans for toasted pumpkin seeds. They provide the necessary earthy crunch without creating safety worries for guests.

Frequently Asked Questions

Can I leave the rind on the cheese for this appetizer?

Yes, completely. The rind on quality cheese is entirely edible, mild, and helps the dairy retain its structure without dissolving completely into liquid butter.

Why did the bottoms of my bites come out soggy?

This usually happens if your fruit sauce was too watery or placed hot into the pastry cups. Cook down your cranberries until thick, let the mixture cool, and bake on your oven’s lower-middle rack.

Can I freeze these before baking?

Yes. Assemble them entirely in the tin, freeze until solid, pop them into a freezer bag, and bake straight from frozen by adding three to four minutes to the total bake time.
